Partytime Ice Creams: Avocado, Chocolate Cookies and Cream, and Mint Chip

Clearly, I couldn’t resist going a little overboard with ice cream for Cody’s party. I think they all worked out pretty well. These recipes are all super simple and really delicious. Yes, they require an ice cream maker, I know that’s annoying but if you have one lying around it’s totally worth it. Alternatively, you could make these ice creams by using an airtight container in the freezer and stirring every 30 minutes until it reaches the consistency you like.

Avocado Ice Cream

Ingredients

  • 2 large, ripe avocados
  • 1 14 oz can condensed milk, chilled
  • 1 13.5 oz can full-fat coconut milk, chilled
  • 1 lemon, juiced (you can save the zest for another use)

Directions

Blend all ingredients in a food processor until smooth. Once smooth, add ingredients to the bowl of an ice cream maker and freeze according the the manufacturer’s instructions. Once frozen, pour ice cream into an airtight container and allow to harden further in the freezer.

This one gets a little firm in the freezer and can be difficult to scoop at times, so you may choose to pull it out of the freezer 10 minutes before serving or pop it into the microwave for 5 seconds.

Coconut Milk Chocolate Cookies and Cream Ice Cream

Ingredients

  • 2 13.5 oz cans full fat coconut milk, chilled
  • 1/4 cup cocoa powder, unsweetened
  • 2/3 cup sugar
  • 20 oreo cookies, crushed (I used the Trader Joe’s knock-offs)

Directions

Combine all ingredients but the oreos in the bowl of a food processor and blend until combined, about 30 seconds. Pour the mixture into the bowl of an ice cream maker and freeze according to the manufacturer’s directions. Five minutes before the ice cream is fully frozen, pour in the crushed oreos. Once fully frozen, transfer the ice cream into an airtight container and store in the freezer until ready to to consume.

Mint Chip Ice Cream

Active Time: 5 minutes | Cooking Time: 20 minutes
Difficulty: Easy

Ingredients

  • 1 cup whole milk, chilled
  • 3/4 cup sugar
  • 2 cups heavy cream, chilled (keep it in the fridge until you’re ready to use it)
  • 2 tsp mint extract
  • 1 cup mini semi-sweet chocolate chips

Directions

Whisk milk and sugar together in a medium bowl until the sugar has dissolved. This takes a while, so be patient. Once the sugar is dissolved, mix in the cream and mint extract. Pour the sweet and minty milk into the bowl of an ice cream maker and freeze according to the manufacturer’s directions. Five minutes before the ice cream is fully frozen, pour in the chocolate chips and keep the ice cream maker running until well combined. Transfer the frozen ice cream into an airtight container and store in the freezer until ready to serve.
