Last Thanksgiving, I decided I wanted to find a new way to enjoy green beans on the holiday that didn’t involve the good old fashioned cream of mushroom soup and fried onions. That gave me the idea to think about some of our favorite flavors and voila! We now have one of our family’s favorite green bean recipes. As I get ready for #2 to make his arrival, I’m also thinking back to some of my favorite treats from when Cody was first born. As a new mom concerned about maintaining my breastmilk supply, I became a little obsessed with galactogogues and creative ways for combining them for easy consumption. Weeknight Meal: Loaded Chicken Quesadillas
Happy Friday, friends! I am super excited to share today’s recipe with you for many reasons. First: it calls for cooked chicken breast, so you can use leftovers from your perfect herb roasted chicken. Second: it is seriously so tasty and easy, you’re bound to add it to the regular rotation. The recipe inspiration comes from a now-closed restaurant in my hometown of San Diego. The sweetness of the corn relish and jalepeno jelly complement the creaminess of the goat cheese so beautifully, it will make you want to cry (well, maybe not but sometimes it’s fun to be dramatic).
