Veggie Frittata Sticks

Easy, quick and packed full of goodies. What’s not to love about these little sticks?!

Ingredients

  • 1 tbsp plus 2 tsp olive oil, divided
  • 1 cup carrot, shredded
  • 1 cup zucchini, shredded
  • 2 cups packed spinach, finely chopped
  • 6 eggs, lightly whisked
  • 2 tbsp flour
  • 1/2 cup cheddar cheese, shredded

Directions

  1. Preheat oven to 350 degrees.
  2. Heat 1 tbsp olive oil in a large skillet. Add vegetables and sauté until slightly softened, about 8 minutes. Pull off the heat to cool.
  3. In a large bowl, whisk together eggs and flour. Stir in cheese and vegetable mixture.
  4. Using a paper towel or pastry brush, grease a 9×13-inch casserole with remaining 2 tsp olive oil.
  5. Pour egg, cheese and vegetable mixture into casserole and bake for 30 minutes or until eggs remain firm when jiggled in the casserole.
  6. Once cool, cut into sticks.

    Rach, how do these freeze? I’m hoping well because I was going to head home and make these since I have some veggies that I don’t want to go bad! Thanks!

      They freeze great!!! I cook them, slice them into sticks and lay them in a single layer in a gallon size plastic baggie. I try to leave some space between the bars so once they’re frozen I can dump them into a smaller baggie (one that doesn’t need to lay flat) and they won’t stick together. I defrost a few at a time, overnight in the fridge. To serve, I just cook one or two in the microwave for 15-20 seconds. Let me know how they work!
