Caprese is an awesome refreshing dish that is easy to assemble and always tastes great. This time of year, tomatoes, avocados and basil are their most delicious, making this dish a perfect farmers market find.
While we have used this as a side dish when in need of some fat to add to our meal, this would also work well as an emergency snack. You’ll want to select a tomato and avocado that are relatively the same height so that you can have the same number of discs.

- 1 large tomato
- 1 large avocado
- 6 fresh basil leaves
- 1 tbsp balsamic vinegar
- 3 tbsp olive oil
- Sea salt and fresh cracked black pepper, to taste
Directions
Slice the tomato horizontally, creating about 6 discs that are about 1/2 inch each. Do the same with your avocado, starting at the top and running your knife along the pit in the middle. Using a butter knife, gently separate each ring from the avocado as you slice them. Peel each ring and stack It on top of a tomato slice.
Top each tomato and avocado with a sprinkling of salt and pepper then add a basil leaf.
To make a quick balsamic vinaigrette, add the olive oil and balsamic to a small mason jar. Sprinkle in a small amount of salt and pepper (think a baby twist of the grinder) and seal the jar. Shake the jar vigerously and drizzle over your caprese stacks. Voila!
